From LCBO Food and Drink, Holiday 2014; Melt in your mouth meringues
1. Arrange racks in upper and lower thirds of oven. Preheat to 200F. Line 2 baking sheets with parchment paper.
2. Beat egg whites on high with an electric mixer until frothy. Add cream of tartar and salt. Continue beating until foamy, about 1 more minute.
3. Add 1 tbsp of sugar and beat for 30 seconds. Repeat until all the sugar has been incorporated. Continue beating until whites are stiff and glossy, about 5 minutes. Stir in peppermint extract.
4. Fit a piping bag with a number 2 plain round tip. Fold the piping bag halfway back and rest on its side allowing it to remain open. Cover half a wooden skewer with red food colouring and paint a single red stripe on the inside of the piping bag.
5. Scoop half the meringue into the painted bag. Cover the bowl with the remaining meringue loosely with a tea towel. Pipe 1/2" kisses about 1/2" apart on both prepared sheets. The meringues will not expand. Clean out the piping bag (or use a new one if using disposable bags) and let dry.
6. Bake meringues in upper and lower thirds of the oven for 60-75minutes, switching sheets halfway through. They should be firm and dry to the touch but not brown. Transfer sheets to a wire rack to cool completely. Lift parchment off baking sheets. Line sheets with fresh parchment paper and repeat with the remaining meringue and the green food colouring.
