In a sauce pan add oil and saute garlic and onion add bag of mixed vegetables potatoes zucchini carrots and pieces of fresh corn turn off heat add salt pepper.
Prepare coconut milk Split it in half take out milk /water Scoop out flesh mix with boiling water blend and strain off water should get 4 to 6 cups of coconut flesh.
Pour coconut mixture and milk on top of veggie mixture and cook for till veggies are 1/2 cooked. Add shrimp, evaporated milk, cheese and bring to a boil add eggs whole crack right on t op cover until eggs are poached Serve
All in one soup very filling You may use crab legs or pieces of white fish to jazz soup up even more!
