Pesto can be frozen for up to 2 months
Place basil, olive oil, pine nuts, garlic and salt in a blender and mixed at high speed, stopping to scrape ingredients down with a rubber spatula.
Pour basil mix into a large bowl and blend in by hand the cheese followed by the butter.
Taste and correct cheese and oil if needed.
Add to the pesto a tablespoon or two of the hot pasta water before mixing it with the cooked pasta.
