Tomato Sauce
Saute onions and garlic 3-4 minutes. Add tomatoes, tomato past and stock. Stir well and simmer 15 minutes.
For Rice Cake
Melt butter and saute leeks 5-6 min. until soft.
Stir in rice.. Pour the stock in a little at a time until the rice is creamy about 20 min.
Stir in the pesto, eggs, and black pepper.
Spoon half the mixture into a 9in pan. Arange mozzarella in the centre and spoon over the remaining rice. Cook over medium heat for 4 minutes.
Invert rice cake, using a plate and slide it back into the pan. Press to reshapeand cook for 4 minutes until golden.
Serve with the tomato sauce.
