Basic macaroon recipe, just add silver rum and dried pineapple. If your store has a bulk bin you will find dried dried pineapple rings, or buy the baby pineapples from Trader Joe's and chop them up. Makes about 4 dozen.
1. Preheat oven to 325
2. Mix all ingredients in a bowl, make sure pineapple bits are distributed evenly
3. Make little balls with the mixture and set them on a cookie sheet liked with wax paper
4. Bake for 15-20 min or until golden brown on top.
