In a small bowl, combine the first six ingredients; set aside. In a large skillet or wok, stir-fry chicken in oil for 5-6 minutes or until juices run clear. Add the vegetables; stir-fry for 3-4 minutes or until crisp-tender. Stir in pineapple and reserved soy sauce mixture; heat through. Serve over rice.
Yield: 6 servings.

veronica_$ 9 years agothe photo shows whole carrots. Did you put whole carrots in a stir-fry? How did you cook them? And was that long pieces of chicken? Not bitesize? The recipe maybe great, but what you are showing in the photo does not look good.
RKG1 9 years agoGreat stir fry, I did increase the garlic. When resized for 2 the recipe called for less than 1 clove, I used 3. My wife said I could make it again anytime, she loved it.
