"This turned out good, I threw in a handful of peanuts with the pineapple and sauce at the end. In the sauce the tomato taste is a bit strong, I might add a tsp rather than a tbsp of ketchup next time...."

Ingredients

1/4 cup Soy sauce
2 tablespoon Sugar
1 tablespoon Vinegar
1 tablespoon Ketchup
1/2 teaspoon Ground ginger
2 cloves garlic; minced
1 pound boneless skinless chicken breasts; cut into strips
2 tablespoon Vegetable oil
1 16-oz package frozen stir-fry vegetables
1 8-oz can unsweetened pineapple chunks; drained

Preparation

In a small bowl, combine the first six ingredients; set aside. In a large skillet or wok, stir-fry chicken in oil for 5-6 minutes or until juices run clear. Add the vegetables; stir-fry for 3-4 minutes or until crisp-tender. Stir in pineapple and reserved soy sauce mixture; heat through. Serve over rice.

Yield: 6 servings.

the photo shows whole carrots. Did you put whole carrots in a stir-fry? How did you cook them? And was that long pieces of chicken? Not bitesize? The recipe maybe great, but what you are showing in the photo does not look good.

Great stir fry, I did increase the garlic. When resized for 2 the recipe called for less than 1 clove, I used 3. My wife said I could make it again anytime, she loved it.
