An easy pineapple cake, made with a cake mix, vanilla pudding, pineapple, and whipped topping or Dream Whip topping.

Ingredients

1 (18 1/4-ounce) box pudding yellow cake mix
1 (8-ounce) can crushed pineapple
1/2 cup sour cream
Whipped Topping
1 (3 1/2-ounce) box instant vanilla pudding; (small)
1 (6-ounce) package Cool Whip Whipped Topping
1 (20-ounce) can crushed pineapple

Original recipe makes 12 Servings

Preparation

Add cake mix, eggs, oil and water as directed on cake mix box.

Mix in sour cream, crushed pineapple and pour into 11 x 13-inch pan.

Bake at 350F until done.

Dissolve pudding in pineapple with juice then fold in cool whip.

Frost when completely cooled.

I have this baking in the oven right now. It smells divine! I used white cake mix instead of yellow, and added 1 tbsp grated fresh ginger. I use extra vigil coconut oil, and used vanilla Greek yogurt instead of sour cream. I'm debating on the whipped cream topping w/pudding, or just adding bourbonized vanilla bean powder to my whipped cream to cut sweetness. I added some shredded coconut to batter, too, as we are count junkies in my house. The cake batter tasted yummy!

My family thought it was too sweet so will try pudding free topping next time. Overall good

This recipe sounds really good but, it is confusing because it is not clear what size can of pineapple goes in the cake and what goes in the frosting. Neither does it tell you what goes in the frosting. Other than that, I would love to try it when I know for sure what to do. :) Thank you, jump7run
