Suggest a better descriptionStarting the night before. Wash & sort beans. Rinse them well. Place beans into a large pot and cover with three to four inches of water. Soak all night. Pour out the soak water and rinse again. Add ham-hocks. Cover with about an inch of water, add other ingredients. Cover & bring to a boil. Reduce to simmer and cook for several hours, the longer it cooks the better it tastes. Check water often and add more if needed. Before serving, stir well & remove ham-hock bones.
