The combination of the treacle and spices makes this sweet-hot marinade particularly good with pork, or chicken or turkey drumsticks
Measure the olive oil, tablespoon by tablespoon, into a bowl, then use the oiled measuring spoon to add the treacle – the oil on the spoon will enable the treacle to slide off easily.
Add the tomato purée, water, the spices and salt and black pepper, then stir thoroughly until everything is well mixed. Keep in a screw-top jar, chilled up to 24 hours then use as required.
