Puerto Rican Pique is the favorite condiment for most Puerto Rican dishes if you're a hot sauce lover. With its combination of sweet and spicy it showcases the best flavors of the island. Each recipe is family specific and this is my version.
Boil the pineapple with rinds in water covering the rinds completely until water turns yellow.
Combine all ingredients (including pineapple water) in an empty 750 ml bottle and shake well. Let the mixture sit at room temperature for 1-2 weeks depending on heat preferred.
After sitting time refrigerate to stop the heat from increasing. You can use the sauce in this state or you can remove the pineapple rinds and blend until smooth then transfer into a hot sauce bottle.
