Yummy Pizza Pockets, great for a snack or for the lunchbox. can be made in batches and frozen ready to grab, reheat and go.
DOUGH
place four and yogurt in a bowl and mix until combined. Turn out onto floured bench and knead lightly until smooth.
Divide into 12 equal portions and set aside.
FILLING
Mix together Ham, Cheeses and Pasta sauce in a bowl. I will weigh the filling mix and then divide by 12 so I know how much to put in each one. Seems a little neurotic but well worth it to make sure you don't end up with a half filled one at the end. I have some of those cheap little bowls from Ikea that I use.
You can fill these with any fillings you would put on a pizza. Add some pineapple for a Hawaiian flavour. Pepperoni & salami for a meatlovers. Feta & Spinach for a Vege version. The combos are endless.
TO ASSEMBLE
Roll out eat dough into a rough square. Place a serve of the filling in the middle. Fold each side in and place on a greased tray folded side down.
Cook in a 180 degree (celcius) oven for approximately 20 mins - depends on your oven and how brown you like them.
Once cool you can package up and freeze.
