Add sugar or syrup to ¾ cup warm milk. Stir to dissolve. Then add dry yeast by sprinkling over the milk. Keep in warm space to allow yeast to work-40-50 degrees C or 100-120F.
Add eggs to flour in large bowl. Mix in with fork to get as much flour to be coated with eggs as possible. Add salt. Then slowly add very warm milk-milk should be warm enough to warm the flour to 50 degrees C or 120F, but not hot enough to cook the eggs or the flour. Use electirc mixer to work the flour into the milk. It is important to have a smooth consistency. Then add the yeast mixture, gently stirring to mix thoroughly.
Cover with a wet cloth, place in a spot that will keep the mixture no more than 50 degrees C or 120F. The batter is ready when it has tripled in volume.
Warm the poffertjes pan slowly. It is hot enough when drops of water “dance” on the pan.
It is easiest to put the batter into a squeeze bottle.
Add butter to each “dimple” in the pan. Then squeeze batter to fill each dimple. When bubbles start to set into the tops of the batter, you should turn each poffertje. It should be golden brown. Cook another minute or two on the second side until it is lightly browned.
Place the poffertjes onto a plate. Dizzle melted butter over the poffertjes. Drizzle liqueur next, then sprinkle a dusting of powdered sugar over the top.
Serve with either fruit salad,sausages or something that compliments the flavor of the poffertjes.
