Delicious Popovers
Beat the eggs, add eggs to milk, beat together. Mix in melted butter (butter should be warm, not hot). Sift salt and flour together (or blend with whisk). With whisk, blend the wet ingredients into the flour mixture until thoroughly blended. Don't beat...just fold until well blended. Preheat oven to 450. If using teflon popover pans, no prep needed. For ramekins, spray with baker's cooking spray. Fill each ramekin (or popover cup) 2/3 full. Cook at 450 for 15 minutes. Reduce the heat to 350. Cook another 20 minutes or until golden brown. Cook on middle rack.
