Suggest a better descriptionTrim away any fat from filet; season with salt and pepper; and brush with oil. Fold small end under to make a loaf shape.
Place on rack in preheated 400* oven for 30 minutes for rare roast. Remove and cool to room temperature.
Remove puff pastry from package and warm to room temperature before unfolding.
Cook chopped mushrooms in butter over high heat for 1 minute -- stirring one or two times. Add brandy and continue to cook until most of liquid has evaporated. Remove from heat and add pate. Spread mixture over top of filet.
Unfold puff pastry; moisten edge and seal both sheets together to make one long sheet. Lay puff pastry over top of filet lengthwise and wrap around on bottom to completely encase filet. Trim off excess puff pastry. Moisten edges and seal.
Turn right-side up with pate on top and pastry folds on bottom. Brush pastry with beaten egg. Decorate top with desgins made from scraps of puff pastry. Gently brush designs with beaten egg.
Carefully transfer to lightly greased baking sheet and bake in preheated 450* oven for about 25 minutes or until pastry is golden brown. Remove from oven and let stand at least 10 minutes before serving.
If desired, decorate platter with mushroom cap garnish. Serve with Madiera Sauce (Directions below.)
Madiera Sauce: Saute 1/2 cup finely chopped mushrooms in butter until tender. Add 1 can beef consumme and continue cooking. Thicken with a small amount of corn starch. Before serving add 2 - 3 tablespoonsof Madiera (or another red wine).
