Porcupine Meatballs with Brown Gravy

Brown rice meatballs with beef cream gravy


1 lb Ground beef
1 lb Ground veal
2 whole Eggs; beaten
3.5 cups water
2 packages Non-gluten cream soup mix
1 tsp salt
to taste garlic powder, pepper, onion powder, cayenne
2 cups rice; raw

Original recipe makes 8 Servings



Cook brown rice 3/4 of the way done; let cool. Mix rice, ground meat, spices, and eggs. Form into approximately 30-40 meatballs. Brown in skillet.

Mix water, soup mix, and spices to taste; whisk until thoroughly combined. Pour over browned meatballs and simmer for 30 minutes, stirring occassionally.
