Bridget made this for us in December 2014 and it's a keeper.
Preheat oven to 375.
Place spareribs in a heavy pot (dutch oven) with half of chopped onion, minced garlic, and thyme springs. Cover, bake for 1.5 hours. Remove ribs, set aside.
In same pot, brown bacon over medium heat. Remove all but 2 Tbs fat; add celery, carrot, salt, pepper, thyme leaves, and remaining onion and garcli. Cook for 1-2 minutes.
Add broth, wine, tomatoes, bay leaves and beans. Bring to a simmer, then add cooked ribs. Meanwhile, in a small bowl, mix oil, breadcrumbs, and parsley.
Sprinkle breadcrumb mixture over cassoulet and bake for 1 hour, uncovered, occasionally pressing breadcrumbs into cassoulet to thicken it. Let cool and serve.
