2 c Plum tomatoes; diced
1/4 c Water
Salt and pepper
4 Loin pork chops
2 tb olive oil
2 ts Garlic; chopped
1 1/2 c Mushrooms; thin sliced
1 1/2 c Green pepper; 1-inch cut
1/2 c Dry white wine
1 ts Oregano

Original recipe makes 4 Servings



1. Put the tomatoes, with the water and bring to a boil. Cook, stirring occasionally, until reduced to about 1 1/2 cups. Add the salt and pepper to taste, set aside. 2. Sprinkle the chops with salt and pepper. 3. Heat the oil in the skillet and add the chops. Brown on both sides, about 5 min. to a side. Add the garlic, mushrooms and green peppers. Coover closely and cook about 5 min. 4. Stir in the wine, tomatoes and oregano. Cover closely and cook 35-40 min. Serve with buttered noodles sprinkled with parm cheese. The name for this dish: Cotes de porc "pizzaiola"

Even though I over cooked it a little the dish turned out good. I would suggest that during the 30 min simmer at the end. Take a peek at it every 5 or ten min. I just let mine go for 30 min and it reduced down and burned a little. But it tasted good. This is a good quick and fairly easy dinner to make
