Eating Well Serves Two
Place pork between 2 sheets of plastic wrap. pound with a mallet or the bottom of a heavy skillet to a 1/2 inch thickness. Remove the plastic and rub the pork with salt and pepper. Coat a large nonstick skillet with cooking spray and pace over medium heat. Add the pork and cook until browned on both sides and cook through 2-3 minutes per side. Transfer to 2 plates; cover with foil to keep warm. Add oil and shallot to the pan and cook, stirring until soft about 30 seconds. Add mushrooms and cook, stirring occasionally until they soften and begin to brown, about 2 min. Add vermouth and cook for 15 seconds. Stir in mustard, thyme an any juices that have accumulated from the pork; cook until th sauce is thickened and slightly reduced, 1-2 min.
