This dish turns out very flavorful and the meat is super tender. This roast works best in the oven, but could easily go on the grill, provided it was cooked over indirect heat. If you are not going to put it on the grill, then a good cast iron skillet is essential, as it can go from the stove top to the oven. Cleaning one pan is so much easier than cleaning two!
Combine all the rub ingredients.
Preheat the oven to 350.
Heat the skillet on the stove top, and put the olive oil in when the pan is hot. Put the roast in the hot skillet, and immediately brush the rub on, picking it up and brushing all sides. When all the sides have been completely rubbed, remove the pan from the stove top and put it into the preheated oven,
Roast until the meat reaches an internal temperature of 160 degrees, about 35 minutes. Remove from the oven and let stand at least 5 minutes before carving.
