Suggest a better descriptionPut butter and oil in snug heavy pot over medium high heat, and brown roast on all sides.
Add salt, pepper, and one cup milk, turn heat to minimum, put lid on slightly askew.
After one hour, check if milk has turned into a brown sauce. When this happens, add another cup of milk and cover the pot tightly.
After 30 more minutes, set lid askew again.
Cook 2 1/2 to three hours total, adding 1/2 cup of milk if pot dries out.
When pork is tender and milk is thick brown clusters, remove pork, spoon fat from pot, add a few spoons of water, raise heat, and scrape to make sauce.
