Great
Thaw roast. Rub in garlic pepper to season, being sure to work it into the cracks. Place it in a roasting pan. Cut onion and place ontop of roast. Sprinkle salt on top as well. Cook at 350? for 2 hours. Add carrots and cook for an additional 30 minutes.
Use meat thermometer to determine if done. Serve with mashed potatoes.
Gravy:
Use drippings in bottom of pan. Add water to corn starch until disolved. Stir into drippings and cook on stovetop.
