Quick and easy mushroom casserole
Preheat oven to 375 degrees.
Prepare pasta al dente. Drain.
While pasta is cooking, heat oil in medium sauce pan over medium heat.
Add onions and mushrooms, season with salt and pepper to taste, and saute for 4 minutes or until mushrooms release their liquid and onions are caramelized.
Add sherry and saute until most liquid has evaporated. Set aside.
Combine egg yolks and sour cream, add nutmeg, salt and pepper to taste.
Beat egg whites until you get stiff peaks, fold into egg mixture.
Add mushrooms and pasta and coat well.
Butter 9x13 baking dish and add pasta mixture.
Sprinkle with cheese and bread crumbs.
Cover with aluminum foil and bake for 20 minutes. Increase heat to 450 degrees and bake for 5 minutes or until top is golden brown.
Add tuna, chicken, or sausage for more substance.
