"This recipe is my personal favorite for pot roast. It tenderizes the toughest meats and produces a wonderful, flavorful gravy. It's best when cooked in a cast iron Dutch oven. This is a whole meal in one pot - my favorite kind of meal."
In a large cast iron Dutch oven, heat oil over moderate heat until hot and brown beef on all sides. Season with salt and pepper. When brown, transfer beef to a plate.
Add onions and garlic to the Dutch oven and cook until the onions are golden.
Stir in tomatoes, vinegar, brown sugar, bay leaves, selected seasonings, and beef stock (or boullion).
Bring to boil and add beef
Braise the beef, covered, in a preheated 300 degree oven for 4-4 1/2 hours
Add carrots, bring to boil again on the stove, and braise for 1/2 hour.
Add potatoes, bring to a boild on the stove, cover and braise in the oven another 1/2 hour or until everything is tender.
Transfer beef to a cutting board and let stand 10 minutes covered with aluminum foil.
Degrease the gravy if necessary, add the cornstarch, and heat on the stove 5 minutes or until thickened.
Discard the bay leaves,slice beef and put on a platter surrounded with the vegetables.
Pour gravy over the beef or serve on the side.
