Paleo, no potatoes
Season roast with salt and pepper. Sear in hot pan until all sides are browned. Add to pot. Cook roast for about 4-5 hours in slow cooker on low.
Add rest of ingredients and cook another 2-3 hours until roast falls apart.
Serve with fresh parsley.
Also serve over roasted rutabaga, cauliflower puree, or the side of your choice.
