Hearty potato dish
1. In a large non-stick skillet, heat olive oil over medium heat. Add the onion and white part of green onions and sauté for 3 min.
2. Add the garlic and heat for 30 seconds.
3. Increase the heat to med-high heat and add the potatoes, 1 tsp salt and 1/4 tsp pepper. Cook for 10-15 min, flipping the potatoes regularly until well browned.
4. Blend the remaining salt & pepper, tofu and soy sauce in a food processor until creamy.
5. Pour creamy mixture and green part of the green onions over the fried potatoes and mix. Pour this mixture into a large oiled pie plate.
6. Bake for 40 min or until center is firm. Allow to cool for 10 min., then invert onto a serving plate.
