Potato casserole that we usually serve for Passover
1. Grate potatoes quickly so they do not discolor. Squeeze out excess liquid.
2. Add eggs and mix well.
3. Sift together dry ingredients and add to potatoes.
4. Saute' onion in iol till lightly brown and add to batter. Stir well.
5. Pout into greased baking pan. Bake at 350-degrees until brown and crips at the edges about 1 hour.
6. VARIATION: Put into well greased small custard cups. Bake for 45 minutes at 350-degrees.
