2 Eggs
2 lb Potatoes *
1/2 ts Baking Powder
1 medium onion *
3 tb Flour
1 1/2 ts Salt
1/2 ts Pepper
Vegetable oil; for frying

Original recipe makes 12



Soak potatoes in the water for 10 minutes; drain and squeeae dry in a kitchen towel. In a large bowl, combine all ingredients except the oil; mix thoroughly. Pour oil into a large skillet to a depth of 1/8 inch;Place ofer medium heat. For each pancake, pour 1/2 cup potato mixture into the pan; flatten slightly. Cook about 6 minutes until crispy and brown, turning once. Repeat with more oil and remaining potato mixture. Serve with sour cream and applesauce, if desired. Awesome. Secret, not too large patties.

I made clam jacks, I know sounds gross, but so delicious. Had to add a bit more flour as the clams made it to runny. Also added a bit more spice, garlic powder, pepper, & smoked paprika. (all to to taste) Very West Coast First Nations delicacy. Just ate, everyone is very full & very happy! I added about 1 cup of chopped butter clams to the original recipient.

This is a great recipe! Easy & much fresher than frozen hash browns. They are wonderful for a snack or for breakfast with a side of fresh fruit! And fun to cook, too!
