Great way to use up the left over mash potatoes and the kids will love them. Serve with lemon juice, syrup, ice-cream or cream.
A great way to use up left over mashed potatoes from dinner. Adjust ingredient quantities depending on how much mashed potatoes you have left over.
Put mashed potatoes in a bowl, beat in the eggs and salt. Put in about the same amount of flour as the size of the eggs (roughly half a cup). If the dough is a little thick put in some milk, but don't make the mixture too thin.
In a heavy based frypan put in some oil and warm til it is very hot. Put in large dobs of mixture into frypan and spread out a little. When cooked on one side, flip and cook on other side.
Serve savory with salt or garlic. Serve sweet with sugar, maple syrup or lemon juice.
Taste great hot just off the frypan or cold the next day for lunchboxes.
ReverendKen 1y agoThis is great with additional items, I like to put chopped ham right in the mashed potatoes, then after I turn them I put some shredded cheese on top, it's great, I usually put a few chopped Serano peppers in my own.
veresa 3y agoAdd grated garlic and onion, and I grated half a potato to mix with the mashed, gives it a little texture.
