Prepare potatoes (if they are thin skinned or 'new' potatoes I leave the skin on?if the skin looks kind of yucky then I will peel them and I chop them into bite sized pieces) and boil in salted water until just tender. Drain.
Combine oil, vinegar and oregano and add to hot potatoes. Taste at this point for salt and add some if it is needed. Cool the potatoes and add the rest of the ingredients, mix well.
