Easy bar-b-que prawn recipe
1. To make the mayonnasie, process the mayonnaise, red pepper tapenade and lemon juice in a food processor until smooth.
2. Combine garlic, chilli, mint, lemon rind, oil and lemon juice in a medium bowl. Add prawns and stir to coat. Place in the fridge for at least 10 minutes to marinate.
3. Thread prawns onto skewers and season with salt and pepper. Heat a bar-b-cue grill or char grill on high, spray the skewers with oil. Cook for 2 - 3 minutes on each side until golden.
4 Serve with Mayonnaie and Lemon wedges.
