This is an easy and delicious recipe.
Coat the bottom of a fry pan with a little bit of oil and hear over medium heat. Pour the remaining oil over the pork rubbing it in. Mix together 1 teaspoon of each spice listed above on a plate. encrust the pork roasts in the spices. Using tongs add the roasts to the heated pan and cook for 5 minutes on each side. Meanwhile, take 1/2 of the diced onion in a large stock pot. Add 1 tablespoon of the honey, the vinegar, and the apple juice. Once the pork is done add it to the stock pot. Cook on medium-high for at least 2 hours. After the two hours remove the pork from the stock pot and place in a large bowl. Using two forks shred the meat. Set aside. Ina large frying pan add the rest of the onion and begin to cook on medium heat. Add the ketchup,the rest of the honey, the brown sugar and the rest of the spices. Mix together. Add two ladles of the cooking liquid. Heat for at least five minutes or until thick. Add the shredded pork in the pan,mix well and heat on medium low for an additional 10 to 15 minutes. Serve on any type of roll. Could use store bought B.B.Q sauce.
Additional sides: coleslaw and baked beans.
