Be careful not to bake it too long or it will dry out. It is delicious when it is moist.
In a large bowl, beat together the eggs, shortening, and sugar.
Add and beat in the pumpkin.
Add the remaining dry ingredients in three additions alternately with the milk and vanilla.
Pour into three greased loaf pans and bake about one hour at 350. To test for doneness, a toothpick should come out without large clumps on it, but not completely clean.
