This is a soft moist cake with a surprise center. You can get creative however you wish. It makes 3 bread loaves... a layer cake... sheet cake... or bunt cake.
Preheat oven to 350. Beat the cream cheese, 1/4 C. sugar, 1 egg, and milk in small bowl until creamy. Add maple extract and blend. Set aside. In a large bowl, beat the 3 c. sugar, pumpkin, oil, water, and 4 eggs. In another large bowl mix the flour, baking soda, baking powder, salt, and spices. Gradually add the dry ingredients to the wet ingredients. Stir in the nuts and raisins if you prefer using them. Pour half the batter into your cake pan/pans or loaf pans. Now carefully spoon the cream cheese filling over the batter. Spread it out carefully. It's best to try to keep it away from the sides of the pan. Add remaining batter completely covering cream cheese filling. If making loaves or layered cake, bake approx. 50 minutes or until toothpick comes out clean. Bunt cake takes approx. 1 hr. 15 min. Leave in pan and place in refrigerator to cool completely. After completely cool remove to cake plate. Store in refrigerator.
I drizzle this with my caramel glaze which is posted on this site. The caramel compliments the pumpkin and maple filling well. It's important to cool this in refrigerator to set the cream cheese. I learned this from experience after my 1 st attempt. Seconds after I turned it onto the cake pan the filling oozed out all over the counter. Can also use walnuts rather than pecans or cranberries rather than raisins.
