Suggest a better description1. Place pumpkin, zucchini, capsicum, pumpkin seeds and olive oil in a food processor and pulse until it has the texture of chunky pesto.
2. Spoon into a bowl, add remaining ingredients (except 1 teaspoon of parsley and the avocado) and combine well. Leave to marinate for 1 hour.
3. Peel and pit the avocado, and mash roughly with the back of a fork. Divide pumpkin chilli mix between four bowls and top each with a dollop of the avocado. Garnish with parsley sprigs.
