Suggest a better descriptionCut pumpkin in pieces and wash. Boil rapidly in water with salt for 30 minutes in a covered pot. Drain thoroughly and mash. Stir in the sugar, flour add vanilla extract, mixing well after each addition. In a frying pan, heat fat and drop mixture by spoonfuls to fry in shape of thin fritters. Fry until golden brown. Remove and drain on absorbent paper.
