Top-ranked recipe named "Pumpkin Loaf/Cupcakes with Cream Cheese Icing"
"Loved this recipe!!! I doubled it and had soo many cupcakes. But not one of them was left to waste!!! I also added some spices to it, like ginger and allspice. Just to give it a little more. Everyone loved it. The cool part too is I didn't have to double the frosting. There was plenty!! Favorite recipe for fall!!!"- KailaB2008
Mix eggs and sugar in large bowl. Add oil and mix. Combine dry ingredients and add to egg mixture. Mix in vanilla and add pumpkin. Pour into a floured loaf pan and make smaller loaf or cupcakes with remaining batter. Bake at 350° for 50-60 minutes or until knife comes out clean.
Beat butter and cream cheese until well blended. Slowly add sugar and vanilla.

mogriff1 8 months agoThese were really good! I made them into cupcakes. I used 1/2 oil and subbed the other half with applesauce. I baked them for about 23 minutes. It made 24 cupcakes. I topped them with candy pumpkins. I took them to the office Halloween party, they were all eaten!
