Pumpkin Loaf/Cupcakes with Cream Cheese Icing

"Loved this recipe!!! I doubled it and had soo many cupcakes. But not one of them was left to waste!!! I also added some spices to it, like ginger and allspice. Just to give it a little more. Everyone loved it. The cool part too is I didn't have to double the frosting. There was plenty!! Favorite recipe for fall!!!"


4 Eggs
2 cups Sugar
1 cup canola oil
2 cups Flour
2 tsp baking soda
2 tsp cinnamon
1/2 tsp salt
2 cups canned pumpkin
1 tsp vanilla
Cream Cheese Icing:
1 8-oz cream cheese
1 stick butter; softened
1 box (about 3 cups) 4x sugar (powdered sugar)
2 tsp vanilla

Original recipe makes 12 Servings



Mix eggs and sugar in large bowl. Add oil and mix. Combine dry ingredients and add to egg mixture. Mix in vanilla and add pumpkin. Pour into a floured loaf pan and make smaller loaf or cupcakes with remaining batter. Bake at 350° for 50-60 minutes or until knife comes out clean.


Beat butter and cream cheese until well blended. Slowly add sugar and vanilla.

Delicious! Cupcakes turned out great, baked for 20 minutes! Used a different cream cheese frosting because I wanted it to be fluffy :)

I made this for the first time today and it turned out very good. The time listed for baking ended up being much longer for a loaf - more like 1-1/2 hrs. Also the batter almost completely filled the loaf pan. To avoid spilling over while baking I had to adjust temp between 350 and 330. Lastly, I halved the frosting ingredients and it was still plenty.

Great! Used this recipe to make cupcakes. Added a bit more pumpkin and baked at the same temperature for about 20 minutes. Turned out excellent!

Delicious!! Used about 1 cup more of pumpkin (because I had a bigger can of pumpkin) which worked out great (didn't adjust any other ingredients). Baked for about 75 minutes. Turned down oven to 300 for the last 20 minutes since top was done and nicely browned. Huge hit!

These were really good! I made them into cupcakes. I used 1/2 oil and subbed the other half with applesauce. I baked them for about 23 minutes. It made 24 cupcakes. I topped them with candy pumpkins. I took them to the office Halloween party, they were all eaten!
