Mix eggs and sugar in large bowl. Add oil and mix. Combine dry ingredients and add to egg mixture. Mix in vanilla and add pumpkin. Pour into a floured loaf pan and make smaller loaf or cupcakes with remaining batter. Bake at 350° for 50-60 minutes or until knife comes out clean.
Beat butter and cream cheese until well blended. Slowly add sugar and vanilla.

IronChefChachi 3 weeks agoDelicious!! Used about 1 cup more of pumpkin (because I had a bigger can of pumpkin) which worked out great (didn't adjust any other ingredients). Baked for about 75 minutes. Turned down oven to 300 for the last 20 minutes since top was done and nicely browned. Huge hit!

mogriff1 12 months agoThese were really good! I made them into cupcakes. I used 1/2 oil and subbed the other half with applesauce. I baked them for about 23 minutes. It made 24 cupcakes. I topped them with candy pumpkins. I took them to the office Halloween party, they were all eaten!

Jenny0123 1 year agoNever making again! They are too good! I barely had them frosted before they were all gone!! I used my own cream cheese frosting recipe though.

Declantoo 2 years agoThe outside of the cupcakes burned while the inside is liquid and dense. Did u mean baking powder instead of soda?
