"Loved this recipe!!! I doubled it and had soo many cupcakes. But not one of them was left to waste!!! I also added some spices to it, like ginger and allspice. Just to give it a little more. Everyone loved it. The cool part too is I didn't have to double the frosting. There was plenty!! Favorite recipe for fall!!!"

4 Eggs
2 cups Sugar
1 cup canola oil
2 cups Flour
2 tsp baking soda
2 tsp cinnamon
1/2 tsp salt
2 cups canned pumpkin
1 tsp vanilla
Cream Cheese Icing:
1 8-oz cream cheese
1 stick butter; softened
1 box 4x sugar
2 tsp vanilla

Original recipe makes 12



Mix eggs and sugar in large bowl. Add oil and mix. Combine dry ingredients and add to egg mixture. Mix in vanilla and add pumpkin. Pour into a floured loaf pan and make smaller loaf or cupcakes with remaining batter. Bake at 350° for 50-60 minutes or until knife comes out clean.


Beat butter and cream cheese until well blended. Slowly add sugar and vanilla.

These were really good! I made them into cupcakes. I used 1/2 oil and subbed the other half with applesauce. I baked them for about 23 minutes. It made 24 cupcakes. I topped them with candy pumpkins. I took them to the office Halloween party, they were all eaten!

Never making again! They are too good! I barely had them frosted before they were all gone!! I used my own cream cheese frosting recipe though.

This was awesome! I did add a lil bit of cinnamon to the icing. Everything was moist and delicious!

The outside of the cupcakes burned while the inside is liquid and dense. Did u mean baking powder instead of soda?
