Ready in 2 hours
Mix eggs and sugar in large bowl. Add oil and mix. Combine dry ingredients and add to egg mixture. Mix in vanilla and add pumpkin. Pour into a floured loaf pan and make smaller loaf or cupcakes with remaining batter. Bake at 350° for 50-60 minutes or until knife comes out clean.
Beat butter and cream cheese until well blended. Slowly add sugar and vanilla.

Shardy 1y agoI made this for the first time today and it turned out very good. The time listed for baking ended up being much longer for a loaf - more like 1-1/2 hrs. Also the batter almost completely filled the loaf pan. To avoid spilling over while baking I had to adjust temp between 350 and 330. Lastly, I halved the frosting ingredients and it was still plenty.

ChuckyCat 1y agoGreat! Used this recipe to make cupcakes. Added a bit more pumpkin and baked at the same temperature for about 20 minutes. Turned out excellent!

IronChefChachi 1y agoDelicious!! Used about 1 cup more of pumpkin (because I had a bigger can of pumpkin) which worked out great (didn't adjust any other ingredients). Baked for about 75 minutes. Turned down oven to 300 for the last 20 minutes since top was done and nicely browned. Huge hit!

mogriff1 2y agoThese were really good! I made them into cupcakes. I used 1/2 oil and subbed the other half with applesauce. I baked them for about 23 minutes. It made 24 cupcakes. I topped them with candy pumpkins. I took them to the office Halloween party, they were all eaten!
