A delicious variation to the traditional pumpkin pie. This is thick, creamy, and really delicious, yet still pumpkin!
Preheat oven to 325?
Mix crust ingredients together and press into the bottom and up the sides of a 9" springform pan. Bake for 10 minutes.
Beat cream cheese, 3/4 cup sugar, and vanilla at medium speed until well blended. Add eggs, one at a time, mixing at low speed after each addition, just until blended. RESERVE 1 1/2 CUPS OF BATTER AND SET ASIDE.
Add remaining sugar, pumpkin and spices to the remaining batter and mix well.
Spoon the pumpkin mixture and the cream cheese batters alternately over the crust. Zig zag a knife through the batters to marble. Bake for 55-60 minutes, or until the center is almost set. Run a knife around the rim to loosen. Cool before removing rim. Refrigerate 4 hours or overnight before serving.
