Yummy, moist pumpkin muffins. These are made to be non-dairy but would be delicious with a cream cheese frosting.
1. Preheat the oven to 350 degrees.
2. Sift all dry ingredients together.
3. Add all other ingredients mixing slowly between each one.
4. Mix well once all ingredients are added.
5. Fill greased muffin tins almost full.
6. Bake muffins 20-24 mins until an inserted toothpick comes out clean.
Make sure to grease your tins. If you use paper liners you may wish to spray them with cooking spray. Though delicious, they can stick to the pan and papers if you forget this step.
