I used whole wheat flower and substituted pumpkin pie spice for cinnamon and these pancakes were delicious! Not too much pumpkin flavour (my husband isn't a fan of pumpkin and he enjoyed these) and still fluffy.
I did half whole wheat flour, half unbleached, added pumpkin pie spice, but forgot the vanilla. The pancakes were dense, but tasted good. The second half I added which chocolate morsels for fun and they were delicious!! My batch made 18 or so 4 inch pancakes. I would make again.
I posted a review of this a while ago and I don't know what I did differently, but this time around these were absolutely to die for. The only thing I changed about the recipe was that I added a dash of cloves. My husband was racing about them! Served then with whipped cream.
