One of our favourite pies in our family. I like to make it from pumpkin I have cooked, frozen for this purpose. The day before making pie / pies I take pumpkin from freezer to thaw in fridge.
mix sugar and spices well. Add eggs and beat well. Add remaining ingredients and blend well.
place in uncooked pie shell cover edges with tin foil so pie crust doesn't over cook
Bake 350 until golden brown or toothpick comes out clean.
If making from fresh or frozen pumpkin make sure water has been squeezed from it so that you are left with just the pulp of the fruit / vegetable.
