Ingredients

1 2/3 cup All purpose flour
1 teaspoon Baking soda
3/4 teaspoon Cinnamon; ground
1/4 teaspoon Ginger; ground
1/4 teaspoon Cloves; ground
1/4 teaspoon Kosher salt
1/8 teaspoon Kosher salt
1 1/3 cup Sugar
1/3 cup Canola oil
1 cup Canned Pumpkin; unsweetened
1 1/2 tablespoon Pumpkin
1 large Egg

Prep Time: 15 minutes

Bake Time: 1 hour, 5 minutes

Total Time: 1 hour 35 minutes

Oven Temp: 350F / 180C / Gas Mark 4

Loaf Pan Size: 8"x4" / 20cm x 10 cm

Preheat oven. Grease and flour loaf pan. Sift together first 5 ingredients; stir in kosher salt.

Combine sugar, oil and pumpkin in a large bowl; beat at medium speed with an electric mixer until smooth. Add egg, beating until well blended. Gradually add dry ingredients, beating at low speed until blended. Transfer batter to prepared pan.

Bake at 350F / 180C / Gas Mark 4 for 1 hour and 5 minutes, or until loaf is golden and a wooden pick inserted in center comes out clean. Let cool in pan on a wire rack 15 minutes; remove from pan. Serve warm or at room temperature.

Makes 1 loaf.

I usually hate pumpkin but this bread was delish. I added chocolate chips. Will make again.

This looks great! I can't wait to make it. The only trouble is we don't get canned pumpkin down here in South Africa. I actually have to prepare the pumpkin from scratch. I guess I better make up a whole bunch as I have pies to make as well soon!
