This is a slight modification of the recipe that's on the inside of the Quaker Oatmeal box lid. It's by far the best oatmeal cookie recipe I've ever tried, because it calls for twice as much oatmeal as flour (most use a 1-to-1 ratio, which makes a less dense and hearty cookie).
Heat oven to 350°F. In large bowl, beat butter and sugars on medium speed of electric mixer until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon and salt; mix well. Add oats, walnuts, and dates (buy dates already chopped and sugar-coated; if you chop your own, they'll be too sticky to mix); mix well.
Drop dough by rounded tablespoonfuls onto ungreased cookie sheets.
Bake 8 minutes or until light golden brown. Cool 1 minute on cookie sheets; carefully remove to wire rack (they'll still be very soft). Cool completely. Store tightly covered.
Makes about 5 dozen cookies.
