Easy-to-prepare quiche for brunch.
Combine the first six items (eggs, Bisquick, milk, margarine, pepper and salt) in blender. Pour mixture into buttered 9" pie plate. Top with meat and cheese, pressing down into mixture. Sprinkle with parsley. Bake at 350 degrees for about 45 minutes.
Notes: To reduce fat in this recipe, use 3/4 cup EggBeaters, low fat milk, reduced fat Bisquick, and low fat ham, bacon or sausage. You could also reduce the amount of margarine a little without affecting the taste or texture very much. I ate this at a brunch wedding shower; the hostess made several of these and had them in the oven so that a new one came out about every 5-7 minutes until everyone was served. It worked very well and everyone enjoyed them. Because she was doing several, she made at least one with each of the different meats. I have generally used ham when I have made them. You could probably use vegetables instead of the meat, if desired.
