Salad of butter lettuce, feta cheese and herbs
Prepare quinoa. Wash butter lettuce leaves and dry. Clean, dry and chop herbs (1 cup total). Whisk olive oil, rind, lemon juice and mustard. Put torn lettuce leaves in a large bowl. Add quinoa, feta, dressing, peppercorns and capers. Mix and serve.
