A quinoa based salad with southwest flavors

"I was suprised how easy it was. I was hesitant as I have never made anything with cilantro, but it turned out very good and extremely flavorful. I did add teaspoon more olive oil, as I doubled it and am taking it to a potluck tonight! (I posted a picture)"

Great recipe! Not a huge fan of tomatoes, so I'll try bell pepper next time.

This is delicious! And the dressing is flavorful enough so that I could add more vegetables without worrying about a bland salad.

You may use an extra Tablespoon of olive oil for the dressing mixture if you like. [I posted this recipe.]
