A quinoa based salad with southwest flavors
Cook quinoa in boiling water until liquid is absorbed and the little "tails" appear, 15-20 minutes. Place warm quinoa in a large bowl and add beans, corn, green onions, and tomatoes. whisk together lime juice, olive oil, garlic, cumin, salt and chili powder. Stir dressing into mixture and stir in cilantro. Serve warm or at room temperature

KelleyBrown 2y agoI was suprised how easy it was. I was hesitant as I have never made anything with cilantro, but it turned out very good and extremely flavorful. I did add teaspoon more olive oil, as I doubled it and am taking it to a potluck tonight! (I posted a picture)
christianbuller 3y agoThis is delicious! And the dressing is flavorful enough so that I could add more vegetables without worrying about a bland salad.
