Really nice lamb with bread crmbs and a lovely glaze on top. Great winter warmer with roast veges.
1. Preheat your oven to 200c
2. Mix breadcrumbs, butter and garlic in a bowl and press the mixtre evenly over the racks. Place seasoned side up on a lightly greased baking tray and bake for about 30-40 minutes. You may need to put foil over the lamb toward the end of cooking if the top browns to much.
3. Top with honey glaze and serve with roast vege.
4: HONEY GLAZE:
Blend cornflour with a little of the water, add the rest of the water and ingredients. Stir over a medium heat until mixture boils and thickens - you can also microwave on high for abot a minute.
Note: You can prepare the racks a day ahead and the glaze can be made a day or so ahead if you're short on time.
