Ranch beans, fresh tomatoes, corn chips, cheese on a bed of lettuce
Drain beans, saving juice. In a bowl, put beans, tomatoes, onion, 1/2 of saved bean juice and the Catalina dressing (cilantro, if using).
Chop some lettuce on individual serving plates, add corn chips, then bean mixture. Top with cheese and enjoy.
Ranch Beans is a brand (who knew). They have a couple of varieties. I have used the regular ones and the one that says Pinto beans on the label.
