BASE
1. In a blender pulse almonds a few times
2. Add the dates (drained) and drinking chocolate and blend until crumbly
3. Press mixture in a parchment paper lined tray
4. Place in freezer while making the filling.
FILLING
1. Blend all ingredients until a smooth texture forms
2. Spread evenly on top of the base carefully using a knife or spatula.
3. Place back in freezer while making the top.
TOP.
1. Heat the coconut oil and rice malt syrup together in a microwave safe dish for 1 minute
2. Add the cacao and mix well ensuring there are no lumps.
3. Spread over the top of the filling
4. Place back in freezer for approximately 6 hours to allow to set.
