Don't have a dehydrator? Dry Pakora Bites in a warm oven.
In a food processor, mix dry ingredients until ground down into coarse “flour”. Transfer mixture to large bowl. Add fresh ingredients to food processor and process until vegetables and herbs are minced. Add to bowl of dry ingredients. Mix well. Shape mix into small balls, about 2 inches in diameter. Place pakora bites in dehydrator. Dehydrate at 105° 4-6 hours. Turn over, dehydrate another 3-4 hours, or until pakora bites are completely dried. Or arrange pakora bites on parchment lined baking sheet and place in oven set to warm, with the door ajar. Oven drying may take up to 2 days, depending on size of pakora bites and humidity in the air. Serve with Sweet-n-Sour Mango Dipping Sauce, or any sauce of your choice. Store leftover pakora bites in an airtight container in the refrigerator. To make sauce, thaw frozen mangos or peel, pit and cut-up fresh mango. Add to food processor with sugar or sweetener of choice and vinegar. Process until smooth. Pour into a small serving bowl with a spoon. Garnish with chopped red bell pepper, topped with chopped fresh cilantro leaves. Arrange pakora balls on a serving plate around dish of sauce.
