This is so fast that it can be started at breakfast and be ready for lunch. Try your own variations, adding cheese, caraway, or any herb combination you like.
Scald the milk and dissolve the sugar, salt, and butter in it. Dissolve the yeast in warm water. Add to cooled milk mixture along with herbs. Stir in flour, beat with a spoon, and let rise. When double or more (about 45 minutes), stir down. Beat with a spoon, and turn into 2 greased casserole or bread pans. Let rise again and bake at 350°F for about one hour, covering with foil as necessary. Serve warm with good herb butter. This bread is great served with soup or as toast.
